An excellent recipe for delicious Lenten Lenten Cutlets without eggs. The dish is suitable for everyone who observes Lent.
Lentil cutlets according to this recipe can be made from any variety of lentils: green, red, etc. The cooking time of the lentils, the color of the cutlets and the shade of taste will differ. As for spices, there are options: Italian herbs, Provencal herbs, curry, khmeli-suneli, etc.
In this version, coriander and paprika are added to the lentil mass. The breading is premium or whole grain flour, ground crackers, cereal flakes or a combination of these ingredients.
Lentil cutlets can be a separate dish or a side dish for meat or chicken main courses. Serve them with various tomato or cheese sauces. Cutlets are delicious simply with feta and/or tomato slices.

Lentils of any kind - about 1 cup
Onion - 0.5-1 head
Garlic - 1 clove
Spices - to taste
Flour - 2-2.5 tbsp
Breading - 3-4 tbsp
Salt - to taste
Vegetable oil - for frying

1. First, cook the lentils. The cooking time for a particular variety is indicated on the package, but usually green lentils are cooked for about half an hour, red - 15-20 minutes.
2. Add onion pieces, chopped garlic and selected spices to the cooked lentils. Puree everything together into a coarse puree.
3. Add flour to the resulting mass and mix.
4. Form flat oval cutlets from the lentil mince, bread them. Here they are breaded in a mixture of flour and cereal flakes.
5. Fry in vegetable oil in a frying pan
6. on both sides until golden brown.
