Pide with kefir

Pide is a fast food of Turkish cuisine, a boat-shaped pizza, the dough for which is always kneaded with yeast.
I want to offer a quick version of pide, for which you don’t need yeast, just have fairly sour and fatty kefir on hand. The more acidic the dairy product, the more tender and soft the pide dough will be.
You need to understand that kefir dough should not be filled with flour and made dense, like dumplings. The dough contains vegetable oil, which allows you to knead it soft enough and it will not stick to your hands.
The filling for pide can be completely different. The most common is meat filling, which is always filled with tomatoes or tomato paste, bell peppers, onions and garlic. You can add any vegetables, herbs, etc.

Dough:
Kefir - 200 ml
Vegetable oil - 3 tbsp.
Flour - 350-400 g
Soda - 0.5 tsp.
Sugar - 1.5 tsp.
Salt - 0.5 tsp.
Filling:
Minced beef - 300 g
Frozen vegetables - 150 g
Onions - 1 pc.
Garlic - 2 cloves
Tomato paste - 1 tbsp.
Salt - to taste
Spices - to taste
Bell pepper - 0.5-1 pcs.
Suluguni cheese - 120 g
Adjika - 1 tsp.
Vegetable oil - 2-3 tbsp.

1. Dissolve salt, sugar, soda in kefir and mix well to allow the reaction to take place.
2. Pour in vegetable oil.
3. Then add flour in portions. It is important not to overdo it with flour so that the dough does not turn out too dense. Therefore, you may need a little less flour than indicated in the recipe.
4. Knead the dough on the table, being careful not to add more flour. The consistency should be similar to yeast, just as soft and breathable. Wrap it in film and leave it to “rest” while the filling is prepared.
5. For the filling, take the following products. You also need to add cheese, preferably pickled varieties.
6. Fry onions in hot oil.
7. Add minced meat and fry, breaking up lumps.
8. Add frozen vegetables and garlic, fry everything a little, then pour in 100 ml of water and simmer under the lid until the minced meat is soft and the vegetables are cooked.
9. Next, add tomato paste and adjika diluted in water. Adjika can be replaced with pepper paste. If you don't like it spicy, don't add it. Season the filling with salt to taste and sprinkle with your favorite spices - such as coriander, dried garlic, barbecue spices or dried herbs.
10. Place the finished filling on a plate to cool quickly.
11. Prepare the cheese.
12. Divide the dough into five equal parts.
13. Roll each part thinly into an oblong cake and place on a baking sheet with parchment.
14. Place the meat filling in the center of each tortilla.
15. Form into boats, carefully pinching the corners, as they may open up during baking. Preheat the oven to the highest temperature and bake the pide until golden brown, 7-10 minutes.
16. Leave the finished baked goods under a towel for 10 minutes, and then sprinkle with chopped cilantro or parsley. Kefir pides turn out very soft, no worse than yeast ones, you can’t tell the difference.
