After reviewing several recipes for the Japanese dessert mochi, I chose and tried to prepare one of its simplest versions. I'm talking about rice flour bags with filling. Sweet adzuki bean paste is traditionally used as a filling, but other popular ones include chocolate ganache, berries, fruit pieces and even ice cream!

I had white chocolate with almonds and coconut flakes lying around, but it was so wildly sweet that I added a little bran from various grains and cereals to it. I really liked the mochi dessert made from rice flour and would have looked better if I had used the dye and been able to make the balls the same size

Rice flour - 1 cup

Sugar - up to 1 glass

Water - about 1 glass

Vinegar - 2 drops

Food coloring - optional

Starch - for sprinkling the surface

Filling - to taste

1. For the filling, I suggest melting pieces of chocolate (here - 1 bar weighing 90 g) in a small amount of cream or milk (1-2 tbsp).

2. It is convenient to do this in the microwave cyclically at medium power, for example 2-3 times for 30 seconds at 600-750 W. Stir the melted chocolate.

3. On my own behalf, I added bran to this chocolate mass, or rather a mixture of bran from different grains and cereals.

4. Then the chocolate filling needs to be cooled to be able to form balls out of it.

5. For the rice dough, first mix the rice flour with sugar and food coloring. I added quite a bit of orange (0.3 tsp), but apparently more was needed.

6. Then pour in water and vinegar. Stir until smooth.

7. Cover the bowl with cling film or a microwave dome. Heat the rice mass cyclically 2-3 times for 1-1.5 minutes at a power of 600-750 W with stirring in between. Cool it until warm.

8. Sprinkle the work surface and hands with starch. Roll the rice mass into a “sausage”, which is cut into 8 equal parts.

9. Each piece of rice mass must be flattened and a portion of the filling placed in the center.

10. Next, wrap the filling in the rice mass, secure the edges and give the product something like a round shape.

11. My filling is not very bright in appearance, but it tastes very bright.

12. Japanese mochi is ready. If desired, sprinkle the surface of the dessert with powdered sugar when serving.
