A recipe for a famous and very popular Italian dish all over the world - carpaccio.
I tried carpaccio for the first time about 15 years ago in an Italian restaurant. To be honest, I was just wondering what kind of curiosity this was - raw meat with pickles. I really liked the dish, despite the unusual method of preparation and presentation. If you, like me, love and plan to cook carpaccio, first try to buy good quality meat. It is usually not a cheap pleasure, but it is worth it.
This time I took a piece of roast beef, I just thought that since it makes excellent steaks, then this piece of meat would be suitable for carpaccio. Indeed, the meat is very soft and the dish turned out delicious.
To prepare roast beef carpaccio, prepare the ingredients according to the list. Many manufacturers of good, expensive meat sell it in special vacuum packaging in small pieces. You need to remove it from the packaging and dry it thoroughly with paper towels. Wash the arugula and dry it.

Beef roast beef - 200 g
Olive oil - 3 tbsp.
Worcestershire sauce - 1 tbsp.
Soy sauce - 1 tbsp.
Hot sauce - to taste
Pepper, h.m. - 1 tsp.
Parmesan - 20 g
Lemon juice - 1-2 tbsp.
Salt - to taste
Arugula - bunch
Pickled gherkins - 5-6 pcs.
Marinated squash - 5-6 pcs.
Dried olives - 5-6 pcs.
Capers - 2 tsp.
Pine nuts - 2 tsp.

1. Using a very sharp knife, remove the film from the meat, with which roast beef must be sold.
2. Next, the meat needs to be rolled on all sides in ground black pepper.
3. Wrap the meat in cling film and place it in the freezer for several hours. When frozen, it is easier to cut and becomes juicier.
4. In a small jar, mix butter, Worcestershire, soy and hot sauces, add lemon juice. Close the lid and shake the sauce well.
5. Cut the meat into thin slices, place it between two food bags and beat it with something flat, maybe with a rolling pin. Transfer meat to a serving platter.
6. Also add arugula, olives, pickled cucumbers and squash.
7. Sprinkle with Parmesan and capers, add a slice of lemon.
8. Before serving, pour the roast beef carpaccio with dressing, lemon juice, a little salt, and sprinkle with nuts. Wrap arugula, capers, Parmesan, a slice of cucumber, squash or olive in a slice of meat and eat it like that. Incredibly tasty with strong alcoholic drinks, but also good with red wine.
