Carrot salad with garlic according to this recipe, for my taste, is simply incomparable and incredibly successful both in taste and in terms of storage reliability - piquant, spicy, juicy.
For one liter of salad I needed two heads of garlic (70 g by net weight), onion is an optional ingredient, but I wanted to add it. Tomatoes can be replaced with tomato paste (1-2 tbsp).
Be sure to additionally sterilize jars of salad to ensure long-term storage.

1. Grate the carrots on a coarse grater or a Korean carrot grater.

8. Squeeze all the garlic through a press, add vinegar, stir, after 5 minutes remove the pan from the stove.
9. Fill all prepared jars with salad.
10. Place a kitchen towel on the bottom of the pan, place jars covered with lids on top, pour in water (preferably up to the hangers), turn on maximum heat, wait for the water to boil, and sterilize for 20 minutes in actively boiling water.
11. Seal the jars hermetically, turn them upside down, wrap them in a thick blanket and leave them like that overnight.
12. In the morning, we will store the carrot and garlic salad prepared for the winter in a darkened pantry. Have fun and successful conservation!
