Juicy, aromatic zucchini with garlic, which is stewed in a frying pan, turns out to be both dietary and very tasty!
You can, of course, fry the zucchini in batter and then sprinkle them with garlic, but I really love the dietary version of zucchini with garlic, preferring to simply stew the zucchini with dill, herbs de Provence, and garlic, of course!
For this recipe, you should take very young zucchini, in which the seeds have not yet formed. Fresh dill can be replaced with dried, you can also take dried garlic, but this is all up to your wishes.
We will prepare stewed zucchini with garlic from the products that you see in the photo. Let me make a reservation right away that you may not have to add water, since young zucchini will release a lot of juice.

Zucchini - 250 g
Garlic - 1-2 cloves
Dill - 10 g
Vegetable oil - 1 tbsp.
Provençal herbs - 1 pinch
Salt - to taste
Ground black pepper - to taste
Water - as needed

1. Wash the zucchini and cut off the tails at both ends. Cut each zucchini into slices 2-3 mm thick.
2. Heat vegetable oil in a frying pan and fry the zucchini over high heat for 2-3 minutes, stirring. Add salt and pepper to the zucchini.
3. We’ll also add some aromatic Provençal herbs, literally a pinch.
4. Pour in 1-2 tbsp. water. Reduce heat to medium and simmer the zucchini for 10 minutes.
5. Peel the garlic and chop finely.
6. Add garlic to the zucchini.
7. Rinse the dill under running water, dry with a paper towel and finely chop with a knife.
8. Add dill to the pan and cook the dish for another 5-7 minutes.
9. Fragrant and juicy stewed zucchini with garlic is ready!
