An original recipe for preparing a delicious salad from pumpkin and popular vegetables - peppers, onions and carrots.

Even if you are not an ardent fan of pumpkin, it is worth preparing a pumpkin salad for the winter, since in combination with other vegetables, pumpkin acquires a completely different taste. Considering its benefits, it becomes clear - we must try it! Preparing the appetizer is, in principle, quite simple. And you can add completely different vegetables to the jar for company - onions, carrots, tomatoes, peppers and much more. There are no restrictions on spices, the main thing is that their taste does not overwhelm the taste of vegetables.

Prepare all the necessary ingredients.

Pumpkin - 500 g

Sweet pepper - 200 g

Onions - 120 g

Carrots - 120 g

Vegetable oil - 50 ml

Garlic - 5 cloves

Sugar - 20 g

Salt - 3/4 tbsp.

Table vinegar 9% - 1.5 tbsp.

1. I purchased the pumpkin already chopped. To be honest, I don’t have my own garden and we don’t grow pumpkins. We rarely eat it at all, so we don’t buy it whole either. The best option for me is to buy pumpkin freshly cut at 6 am from the dandelion grandmothers, already without peel and seeds. It’s nice for them and it’s convenient for me. Therefore, we will cut the remaining vegetables, after peeling and washing them: carrots - into strips, sweet peppers - into strips, onions - into cubes.

2. Heat vegetable oil in a saucepan or frying pan, add chopped peppers, onions and carrots. Sauté for 10 minutes, stirring, over very low heat.

3. Add chopped pumpkin, stir and simmer for another 15 minutes. You can add 100 ml of water. Also add salt and sugar.

4. While the vegetables are stewing, peel and finely chop the garlic.

5. After 15 minutes, add garlic, stir, simmer for 5 minutes. Pour in 9% table vinegar, stir and turn off the heat. The pumpkin salad is ready for the winter, put it in sterile jars.

6. Screw on the blanks with sterile lids, tip them over and wrap them up. After a day or two, move it to a more suitable place for storage - in the cellar, pantry.
