Many people are afraid that the minced meat will fall off the skewer. Do not be afraid. The main thing is to make the minced meat correctly and use a wide skewer. A delicious dish for barbecue season.

Beef (no fat) - 0.5 kg
Pork (neck) - 0.5 kg
Onion - 1 head
Zira (cumin) (not to be confused with cumin) - to taste
Black pepper (preferably from a mill)

1. Make minced meat (you can buy minced meat in the store, but... what did they put there?.. :)). Pass the beef, pork and onions through a meat grinder with a fine grid.
2. Add salt, pepper, cumin to the minced meat (grind with your hands or in a mortar)
3. Now the longest process. The minced meat needs to be kneaded and beaten: stir it, take it in your hand and throw it into a bowl. I won’t say exactly the time, 5-6 minutes. The minced meat should become homogeneous and dense.
4. Place the minced meat in the refrigerator for 2 hours.
5. Take the minced meat out of the refrigerator and mix again. The grill is almost ready. Just like for barbecue - there is no fire, the coals are hot.
6. Take a skewer and “stick” the minced meat on it. The thickness of the sausage is slightly greater than the thickness of the sausage. Length - palm size.
7. Skewers with kebabs - on the grill. Watch and turn over so they don't burn. We do not place the skewer on the edge. In about 10 minutes the lula kebab is ready.
8. A very good and simple salad (I don’t remember the name) - both for barbecue and for lula - cut 2 tomatoes and an onion into very thin half rings, add salt, pepper, garlic, a small pinch of sugar.
