A very tender, slightly moist cake - a great addition to a cup of tea.
I used to really love baking with bananas, now I don’t particularly like banana baked goods, but this bread (muffin) remains my favorite in this segment.
Any substitutions are welcome: for example, walnuts can be replaced with almonds, dried apricots with raisins, prunes, and dried berries. Instead of the gingerbread mixture, which includes ginger, cinnamon, vanillin, and nutmeg, you can take ground cinnamon (1 tsp) and ground ginger (0.5 tsp), vanillin on the tip knife, a pinch of ground nutmeg. My bananas are small, so I took three. Spiced banana bread with oatmeal is very tasty, slightly moist, “winter”: aromatic and, thanks to the gingerbread mixture, spicy - ideal for a cup of morning coffee or tea.

Bananas - 2-3 pcs.
Sugar - 180 g
Salt - a pinch
Chicken eggs - 2 pcs.
Refined sunflower oil - 110 ml
Wheat flour - 90 g
Baking powder - 1 tbsp.
Oat flakes - 90 g
Dried apricots - 80 g
Walnuts - 100 g
Gingerbread mixture - 1.5 tsp.

1. Mash the bananas with a fork so that small pieces remain. Add eggs. Mix with a hand whisk.
2. Add butter, salt and sugar. Stir.
3. Add diced dried apricots and chopped (not into dust!) nuts. Stir.
4. Add flour mixed with gingerbread mixture, cereal, baking powder. Stir.
5. Place the dough in a mold (standard muffin tin). If desired, place sliced banana on top of the dough. Bake in an oven preheated to 180 degrees for about an hour. It may take more or less time. The finished bread will come out dry.
6. Spicy banana bread with oatmeal is ready. Cool it completely on a wire rack.
