Tkemali sauce is a Georgian sauce made from sour plums.
If you prepare this sauce correctly, it can be an excellent preparation for the winter and will be stored for a very long time.
Ингредиенты
Plum (pitted) - 2 kg
Salt - 4 teaspoons
Sugar - 6 teaspoons
Coriander - 2 teaspoons
Hot pepper - 0.5 pcs.
Dry ginger - 2 teaspoons
Apple cider vinegar (if necessary) - 40 ml
Garlic
Green cilantro
Dill greens
Parsley (or mint)
Walnut

1. Wash the plums and remove the pits.
2. Twist the plums through a meat grinder. Measure out the required amount of ingredients for the plum sauce.
3. Pour the plum puree into a saucepan with a thick bottom, add all the spices and hot pepper.
4. Put the plum sauce on the fire and cook for 10-15 minutes. Remove the hot pepper from the prepared sauce. (If you find the sauce not sour enough, add 40 ml of apple cider vinegar.)
5. Fill sterilized jars with the prepared sauce and roll up. Tkemali plum sauce is ready for the winter. In winter, when you open the preparation, you will need to supplement the sauce with garlic, nuts and herbs. Squeeze the garlic through a press, fry the nuts and chop with a rolling pin, finely chop the greens.
6. If you use the sauce immediately after cooking, then immediately add garlic, nuts and herbs.
7. Store Tkemali sauce made from plums in the cellar. Cook with pleasure!
