Suluguni cheese (fat, pickled) - 250 g
Butter - 30 g
Egg yolk - 1 pc.

1. First, let's prepare the dough. Sift flour into a bowl
2. Add salt to the flour and gradually pour in water and knead the dough so that it does not stick to your hands. Depending on the flour, you may need a little more water or flour.
3. Cover the finished dough with a towel and set aside.
4. Let's start with the filling. Let's prepare the necessary ingredients. It is better to choose suluguni cheese that is brined and quite fatty, then during heat treatment the khinkali will receive a juicy filling. Separate the egg yolk for the filling.
5. Grate suluguni cheese on a coarse grater and place in a separate bowl.
6. Melt the butter in a water bath or in the microwave.
7. Pour butter and egg yolk into the cheese, squeeze the garlic through a press.
8. Mix the filling.
9. Knead the dough a little, divide into 8-10 parts.
10. Roll out each piece of dough into a thin circle about 10 cm in diameter. (If necessary, add flour to work with the dough.)
11. Place about 1 tbsp in the center of the circle. spoons of filling.
