Rice with vegetables and eggs

A simple and tasty dish - rice with vegetables and eggs.

Nothing extra - boiled rice is perfectly complemented by quite simple vegetables. Carrots, bell peppers and tomatoes provide juiciness, and eggs provide nutrition. A wonderful side dish or a completely independent dish!

Ингредиенты

Rice - 100 g

Eggs - 4 pcs.

Tomato - 100 g (1 pc.)

Bell pepper - 100 g (1/2 pcs.)

Carrots - 80 g (1 pc.)

Ground paprika - 1/2 teaspoon

Salt - 1/2 teaspoon

Vegetable oil (for frying) - 2 tbsp. spoons

Green onions (for serving) - 3-4 feathers

Рецепт

1. Prepare the products according to the list. You can choose bell peppers at your discretion - green, red, yellow or orange. Rice is suitable for both round and long grain.

2. Place the rice in a saucepan or stewpan and pour in about 250 ml of water, add salt, put on maximum heat and bring to a boil. Reduce heat to low and cook rice, stirring occasionally, until tender and liquid has been absorbed, about 10 minutes.

3. Remove the seeds and stem from the pepper. Cut the pepper, tomato and carrot into small cubes.

4. Heat vegetable oil in a frying pan over medium heat. Add the carrots and stir-fry for about 3-4 minutes until soft.

5. Add pepper and, continuing to stir, fry for about 3 minutes.

6. Add tomato and add paprika. Stir and fry for about 2-3 minutes.

7. Add boiled rice to the pan with fried vegetables. Stir.

8. Increase heat to high. Crack the eggs into the pan and immediately stir into the rice and fried vegetables. Stirring, cook for about 2-3 minutes until the eggs are set.

9. Rice with vegetables and eggs is ready.

10. Divide the rice with sweet peppers, tomatoes and eggs into plates and serve, sprinkled with finely chopped green onions if desired.
