Homemade beef basturma recipe.
We prepare the most delicious jerky at home. A universal recipe for both beef, pork or chicken. Use only fillet (tenderloin).

Beef (tenderloin) - 700 g
Sea salt - 100 g
Black pepper - 30 g
Spices (turmeric, basil, rosemary, ground coriander and thyme) - 15 g

1. Prepare the ingredients for beef basturma.
2. How to cook beef basturma: On a clean board, with a well-washed knife, trim the beef fillet from veins and excess fat.
3. Rinse the beef thoroughly under running water and dry well with a waffle towel or napkins.
4. Mix sea salt with coarse pepper.
5. Rub the beef with spices on all sides. Leave for 12 hours in the refrigerator.
6. After a while, rinse the beef from salt and pepper. Let's dry.
7. Place the meat on cheesecloth, folded in half. Sprinkle with spices on both sides.
8. Wrap tightly in gauze and tie on both sides. We hang it in the refrigerator and leave it for 19 days at a constant temperature of +2...+4 degrees. If you do not hang the meat, you need to turn it over to the other side every day.
9. Beef basturma is ready. You need to clear it of spices.
