Pkhali is a Georgian appetizer that can be prepared from any vegetable.
The green sauce remains unchanged, which includes cilantro, garlic, nuts and spices. Parsley is often added. In spring, the healthiest snack will be Georgian-style spinach pkhali.
Typically, this snack is formed into balls no larger than a walnut and garnished with pomegranate seeds. I didn't have any pomegranate, so I used pomegranate sauce for garnish. All Georgian dishes are incredibly tasty, aromatic and colorful. Try it and you will like it.

Fresh spinach - 300 g
Walnuts - 50 g
Cilantro - 1 bunch
Garlic - 2 cloves
Vinegar - to taste
Salt - to taste

1. Rinse the spinach well in running water and place in boiling water for exactly 1 minute.
2. Then remove the spinach from the boiling water and place on a sieve. Squeeze out the liquid thoroughly.
3. Next, you can use a powerful blender, processor or meat grinder. Grind a bunch of cilantro along with garlic and walnuts. Place the resulting mixture on a plate.
4. Grind the spinach well squeezed out of the liquid in a processor until it becomes a dry puree. Your processor must be able to grind everything down to dust, otherwise the spinach will not grind well and large pieces will remain.
5. Combine spinach puree, ground cilantro with nuts and garlic in one bowl. Add all the spices, salt, a little vinegar or lemon juice. Mix well until smooth. The taste should suit you completely - a little sourness, a little spice, a little salt and spice.
6. Form balls from the resulting mixture. Serve with pomegranate seeds or pomegranate sauce. Georgian spinach pkhali as an appetizer can be served with hot pita bread or flatbread for breakfast, lunch and dinner.
