A very tasty Lenten version of the favorite Olivier salad with avocado will come in handy not only during Lent; try it - you won’t be disappointed!

The Olivier salad, beloved by many, is prepared according to a variety of recipes - with meat, sausage, shrimp and even crayfish tails. Only the main ingredients remain unchanged: potatoes, carrots, green peas and pickled cucumbers, as well as eggs and mayonnaise. These last two ingredients are not allowed during fasting. What can you do, do you want a salad? Meat can be replaced with soy sausage, but you can completely do without it. In the vegan version we will use avocado, it will turn out very tasty! If you want, you can add more mushrooms, they will also fit perfectly into the overall picture. We will also make the sauce for the vegan Olivier from avocado, fortunately you can buy it all year round.

So, let's take the products from the list. Boil the potatoes and carrots in advance. The amount of ingredients can be varied to suit your taste.

Potatoes - 4-5 pcs.

Carrots - 2-3 pcs.

Pickled cucumber - 2-3 pcs.

Avocado - 1 pc.

Canned peas - 120 g

Onions - 1 pc.

Apple - 1 pc.

Salt - to taste

Greens - to taste

Lenten sauce:

Avocado - 1 pc.

Lemon juice - 1 tbsp.

Vegetable oil - 100 ml

Salt - 1 pinch

Sugar - 1 tsp.

1. Peel the potatoes and carrots and cut them into cubes.

2. Chop the pickled cucumbers and a small onion into smaller pieces.

3. The avocado should be ripe, but not very soft, a little springy under your fingers. Peel it, remove the pit and cut it into cubes. Cut the apple into smaller pieces. Place the peas without liquid in a bowl as well. To prevent the apple and avocado from darkening, sprinkle them with a little lemon juice.

4. Now it's time to start preparing the delicious sauce. Cut the avocado in half, carefully scoop out the pulp with a teaspoon; we will need the skin later. Place the avocado in a blender bowl, add salt, sugar and lemon juice.

5. Grind the avocado with an immersion blender. You will get a homogeneous mass. Adjust to your taste by adding salt or sugar.

6. Now add vegetable oil to the blender bowl and beat thoroughly again. This is such a smooth, thick and very tasty sauce we got.

7. Mix the salad and season it with avocado sauce.

8. That's all, vegan Olivier is ready! All that remains is to add your favorite greens. You can serve it in salad bowls, or you can “get interesting” and put the salad in halves of avocado skins, like in boats. A hearty, tasty, unusual salad will certainly please your guests and family. Avocado sauce harmonizes wonderfully with vegan Olivier.

9. All ingredients combine wonderfully with each other, the onion and apple have a pleasant crunch, avocado adds its subtle aroma, cucumbers add piquancy to the salad.
