Cheesy zucchini breads are an easy-to-make, light and satisfying snack made from affordable ingredients.

In its general idea, this dish is a little reminiscent of pizza, albeit in a very fancy and less calorie version. The base is a fried, thin, slightly crispy at the edges crust of “dough” made from grated zucchini, prepared with the addition of a small amount of flour, eggs and spices, and on top is a delicious crust of viscous melted cheese. The composition is simple, but the taste is so appetizing that such a snack disappears from the table in a matter of seconds. An ideal option for mastering the zucchini harvest, when all other traditional dishes are already quite boring and you want variety. Try it!

Ингредиенты

Zucchini – 800 g

Mozzarella/hard cheese – 200-250 g

Chicken egg - 2-3 pcs.

Wheat flour – 50-80 g

Green onions – 15-20 g

Garlic – 2 cloves

Vegetable oil – 1 tsp.

Khmeli-suneli – 1 tsp.

Salt - to taste

Ground black pepper - to taste

Parsley – 2-3 pinches (for serving)

1. Grate the zucchini using a grater with the smallest mesh size. Add 2 pinches of salt, stir and leave for 10-15 minutes.

2. Then carefully squeeze the zucchini and drain all the released juice. The more juice you can squeeze out, the better.

3. Add eggs (2 large or 3 small), finely chopped green onions and garlic, suneli hops (or a mixture of Italian herbs) and ground black pepper to the zucchini. Mix everything thoroughly.

3. Adding 1 tablespoon at a time, stir the sifted wheat flour into the mixture. Add just enough flour so that the mixture thickens to the point where the “cake” can maintain its given shape without spreading on the baking sheet. Taste the mixture and add a little more salt to taste if necessary.

4. Line a baking sheet with non-stick baking paper. Grease the paper with a thin layer of vegetable oil.

5. Place the zucchini mixture on a baking sheet and smooth it out to a thickness of approximately 1-1.5 cm.

6. Place the resulting cake in an oven preheated to 225 degrees and bake for 25-30 minutes until the cake is dry around the edges and its surface is browned.

7. Then sprinkle the crust with grated cheese. The combination of hard cheese and mozzarella, in equal proportions (about 125 grams each), tastes especially impressive.

8. Reduce the temperature to 180 degrees, place the crust in the oven and bake for another 10-12 minutes until the cheese melts. Sprinkle the finished cake with 2-3 pinches of chopped parsley.

9. Cut the cake into portions of the desired size and serve, adding tomato sauce if desired.
