Okroshka with beans instead of potatoes

In hot weather, okroshka is the most important soup on the table.

But it happens that traditional recipes for this potato soup are not suitable for preparation - there are no potatoes themselves or they are excluded from the menu. One successful substitution, in my opinion, is adding canned beans. If you choose white beans, they will be almost invisible in the okroshka, and they will taste more like potatoes. It is also possible to mash the beans with a fork and add them to the soup - then the replacement is not visible at all.

Ингредиенты

Canned beans - 150 g

Cucumber - 2 pcs.

Radishes - 6 pcs.

Boiled eggs - 2 pcs.

Sausage (ham, boiled meat) - 150 g

Green onions - 4 pcs.

Dill - 10 g

Kvass - 1 l

Mayonnaise - 1-2 tbsp.

Salt - 0.5 tsp.

Рецепт

1. Rinse green onions and dill under running cold water and shake to remove excess moisture. Finely chop and place in a bowl for okroshka. Sprinkle with salt and grind the greens with it.

2. Wash the radishes and cucumbers and cut off the ends. Cut into small cubes and add to the bowl of greens.

3. Peel the chicken eggs and cut them into cubes. Add to other prepared ingredients.

4. Remove the sausage from the packaging and cut into cubes. Add to other previously prepared ingredients.

5. Rinse the canned beans and add to the okroshka.

6. Add mayonnaise and stir. Add kvass before serving.

7. Serve okroshka with beans instead of chilled potatoes. Don't forget to offer mustard. Bon appetit!
