Fragrant, sweet honey jelly with lemon is a simplified variation of the ancient Slavic dish “full” or “sieve”. The jelly recipe is very simple and does not require much time. A great drink option for a holiday!

Water - 800 ml

Honey - 100 g

Lemon - 50 g

Starch - 15 g

Sugar - 30 g

1. Prepare all ingredients. I use corn starch, although potato starch will also work. Adjust the amount of lemon juice to your taste. Boil some water.

2. Rinse the lemon well, scald with boiling water and dry with a paper towel. Save a little lemon for serving. Squeeze the juice from the remaining lemon. I got 20 ml of juice.

3. Pour hot water into the saucepan (750 ml of the specified amount). Add sugar and half a serving of honey. Stir and bring to a boil. Boil for 1-2 minutes.

4. Pour boiled water at room temperature into the starch. Stir.

5. Pour the starch mixture into the boiling syrup in a thin stream.

6. Heat over moderate heat, stirring constantly with a spoon, for 3-4 minutes, until thickened and the first gurgles appear. Remove from heat.

7. Honey jelly with lemon is ready. Pour the jelly into glasses and garnish with lemon slices.

8. Serve the jelly warm or cold.
