Filled pancakes are a delicious snack or a complete breakfast.

Everyone in my family loves this dish and I always make extra, double or even triple portions. I freeze it for future use - and what, it’s very convenient to get the required number of pancakes, slightly defrost, fry until golden brown and serve. Either with tea or warm milk.

I make pancakes with different fillings: with cabbage, with potatoes and mushrooms, with rice and egg. Today I have pancakes with beef liver - very tasty! Be sure to prepare and please your family with delicious food.

Ингредиенты

Flour - 2 cups

Milk - 1 liter

Eggs - 2 pcs.

Vegetable oil - 2 tbsp.

Salt - 1 tsp.

Sugar - 1 tsp.

FILLING:

Beef liver - 800 g

Eggs - 2 pcs.

Onion - 2 pcs.

Carrots - 1 pc.

Nutmeg - 1 pinch

Salt - to taste

Vegetable oil - for frying

1. Peel the vegetables and chop (no need to chop). Fry over medium heat in a frying pan with vegetable oil until soft.

2. Rinse the liver, cut into medium pieces and place in a frying pan. Fry, stirring, over medium heat for two minutes. Cover with a lid and simmer in its own juice for 20-25 minutes over moderate heat.

3. Cool the liver slightly and place in a blender bowl, add boiled eggs, nutmeg and salt. Grind into a homogeneous mass. If you don't have a blender, use a meat grinder with a fine grinding attachment.

4. Pour milk and vegetable oil into a bowl. Beat in the eggs and mix with a whisk. Add flour, salt and sugar, beat with a whisk or use a mixer. The dough should turn out like liquid kefir. You may need more or less flour, depending on its moisture content.

5. Heat a frying pan, grease with oil or a piece of lard. Fry the pancakes on both sides until golden brown.

6. Place liver filling on the pancake.

7. Fold it into an envelope.

8. Heat a frying pan with oil, place the pancakes seam side down and fry on both sides until golden brown.

9. Delicious, rosy pancakes with beef liver filling are ready.
