Let's prepare all the ingredients for the salad.

Orzo pasta - 150 g
Parmesan cheese - 70 g
Basil - 4-5 leaves
Arugula - 20 g
Lemon - 0.5 pcs.
Pine nuts - 1 tsp.
Olive oil - 1 tbsp
Wine vinegar - 1 tsp.

1. Grate Parmesan cheese on a medium grater.
2. Zest half a lemon and squeeze out the juice.
3. Add lemon juice and zest to the cheese.
4. Pour in olive oil and wine vinegar. Mix everything well.
5. Place the orzo pasta in boiling salted water (0.5 liters of water and 1 teaspoon of salt) and boil it until Al Dente (without cooking it 1-2 minutes before the time indicated on the package). Place the pasta in a colander and let the liquid drain.
6. Place the hot pasta in a bowl with the cheese.
7. Wash the basil and arugula, dry and lightly chop with a knife.
8. Add greens to the salad. Mix all salad ingredients.
9. Fry pine nuts in a hot dry frying pan for literally 1 minute.
10. Add pine nuts to the salad.
11. Warm salad with orzo pasta and Parmesan cheese is ready!
