Semolina cutlets

Excellent semolina cutlets will appeal to both adults and children. You can cook them both sweet and savory!
In my arsenal of semolina cutlets there are two options. One is sweet, with sugar. The other is savory, with onions fried in vegetable oil and seasonings.
Both options are prepared almost the same way; if you want to cook two versions of semolina cutlets at once, the recipe will give explanations for each option.
I will prepare a sweet version of semolina cutlets, with sugar. You can add vanilla sugar if desired.

Semolina - 5 tbsp.
Egg - 1 pc.
Milk - 150 ml
Salt - 0.5 tsp.
Flour - 1.5 tbsp.
Breadcrumbs - 2 tbsp.
Vegetable oil - 2 tbsp.
Sweet option:
Sugar - 1 tbsp.
Vanilla sugar - 5 g
Unsweetened option:
Onions - 1 pc.
Vegetable oil - 0.5 tbsp.
Spice mixture - 5 g

1. Let's start preparing semolina cutlets by cooking thick semolina porridge.
IMPORTANT: if you have semolina porridge left over from dinner or breakfast, you can use it, as long as it is thick.
2. I will prepare fresh semolina porridge. Boil milk in a saucepan, throw a pinch of salt into it and pour semolina into the milk in a thin stream, stirring constantly with a spoon. The porridge will immediately begin to thicken, reduce the heat and cook the porridge for literally 6-8 minutes, until cooked. Remove the porridge from the heat.
IMPORTANT! If you are preparing unsweetened cutlets, at this stage fry the finely chopped onion in a frying pan in vegetable oil (see ingredients for the unsweetened version) for 4-5 minutes, until the onion is golden. Add the onion to the porridge and mix well. Add seasoning or your favorite spices: pepper, thyme, mixed spices for vegetable dishes. Cool the resulting mass.
3. If you are preparing sweet semolina cutlets with me, add regular and vanilla sugar instead of onions.
IMPORTANT! Let the finished porridge cool to room temperature and only then continue to cook the cutlets further.
4. Now add the egg and mix very thoroughly with the porridge until a homogeneous, smooth mass is obtained.
5. Add flour and mix the contents of the pan again.
6. As a result, we should get a mass of this density. If it turns out thinner, add a little more flour.
7. With wet hands, form semolina porridge cutlets and roll them in breadcrumbs.
8. Fry semolina cutlets in vegetable oil for 4-5 minutes on each side.
9. Serve the sweet version of semolina cutlets with sour cream, syrup, caramel or aromatic homemade jam. The unsweetened version is very good served with sour cream, tomato sauce or ketchup.
