Do you bake pancakes or cakes from them? For Maslenitsa I want to show you a recipe for pancake cake with nut and poppy seed filling and chocolate glaze.
Since Maslenitsa is usually celebrated for a whole week, you can prepare not only ordinary pancakes, but also a more interesting dish from them - for example, pancake cake. This cake can be made with any filling. If the filling is unsweetened, then the cake will be served as a snack, but if it is sweet, then as a dessert. I have a sweet option for you - a pancake cake with a nut and poppy seed filling, and the top of the cake is covered with chocolate glaze. An excellent option for those with a sweet tooth and as the end of a festive weekend lunch at the end of Maslenitsa.
It is best to divide the preparation of the cake into two stages if time is limited. Bake pancakes one day, and the next day make the filling and assemble the cake.
So, we take all the necessary products and prepare a nut and poppy seed pancake cake.
Ингредиенты
Pancakes with milk - 11 pcs.
Poppy - 1 glass
Walnuts - 1 cup
Raisins - 50 g
Milk - 150 ml
Chocolate - 1 bar
Sugar - 60 g
Zest of 1/2 lemon
Butter - 40 g
Vanillin - 1/3 tsp.
Рецепт
1. Pour boiling water over the poppy seeds and leave for an hour.
2. During this time, prepare the nuts. Fry them a little in a dry frying pan.
3. Then chop the nuts. Rinse the raisins well in hot water and chop with a knife.
4. Drain the water from the poppy seed and grind it in a mortar; you can grind it in a coffee grinder.
5. Add 100 ml of milk, vanillin and softened butter to the poppy seed. Place on low heat and simmer for 10 minutes until thickened.
6. Then add the raisins, lemon zest and nuts, reserving some nuts for sprinkling on top of the cake. Mix everything well and the filling is ready to use.
7. Place one pancake on a flat plate and coat it with the filling, repeat this with all the pancakes, covering them with the filling, except for the last pancake.
8. In a water bath, melt the chocolate along with the remaining milk, just do not overheat, otherwise the consistency of the chocolate will change. I missed it and the glaze overheated, but it didn't affect the taste.
9. Cover the pancake cake with the resulting glaze. Since the top of the cake is sprinkled with nuts, the appearance of overheated glaze did not spoil the appearance of the cake for me.
10. Sprinkle the cake with chopped nuts, after which it is better to let it stand for a while so that it is soaked, 1-2 hours is enough. Then the nut and poppy seed pancake cake can be cut and served. Bon appetit!
