Lavash envelopes with minced meat, rice and cheese

Delicious, filling, lavash envelopes with an appetizing crispy crust.
The basis of this dish is thin pita bread, in which a filling of boiled rice, grated cheese and minced meat with spices and fresh herbs is wrapped. Minced meat gives the dish juiciness and richness, rice adds nutritional value, and cheese creates a pleasant chewiness.

Thin lavash - 260 g
Minced meat (I used pork) - 250 g
Rice - 50 g
Onion - 100 g
Hard cheese - 50 g
Fresh cilantro - 10 g
Fresh parsley - 10 g
Eggs - 2 pcs.
Milk - 30 ml (2 tablespoons)
Sour cream - 50 g
Tomato paste - 30 g (1 heaped tablespoon)
Vegetable oil - 65 ml (4 tbsp. spoons)
Ground paprika - 0.5 teaspoon
Dried garlic - 0.5 teaspoon
Dried Italian herbs - 0.5 teaspoon
Salt - to taste
Ground black pepper - to taste

1. Pour 300 ml of water over the rice. Cook after boiling until tender, 15-20 minutes.
2. Afterwards, drain the rice in a colander and drain the water.
3. Meanwhile, cut the onion into cubes. Heat a frying pan with oil (20 ml) and fry the onion over medium heat until soft, 3-5 minutes.
4. Transfer the minced pork to the onion.
5. Fry, breaking up lumps, for 7-8 minutes.
6. Add Italian herbs, dried garlic, paprika, salt (1/3 teaspoon), pepper (pinch), tomato paste and 1-2 tbsp. spoons of water.
7. Stir and fry for another 3-4 minutes, until the liquid evaporates.
8. Place the boiled rice in a frying pan. Mix.
9. Finely chop the cilantro and parsley and add to the rest of the ingredients. Mix everything.
10. Transfer the minced meat and rice into a bowl and leave to cool. Grate the hard cheese on a medium grater and add to the cooled filling.
11. Add sour cream there.
12. Mix everything - the filling is ready. Cut the pita bread into rectangles measuring 10x25 cm. I got 13 pieces. Place about 1 tbsp on the edge of the sheet. spoons of filling.
13. Fold the edge of the stuffed pita bread into a triangle.
14. Then turn it over, forming a triangle.
15. And we turn the remaining edge inward. This is how we form all the envelopes.
16. Break the eggs into a bowl. Add milk and a small pinch of salt. Mix everything until smooth.
17. Dip the envelope into the egg-milk mixture.
18. Place in a frying pan with heated vegetable oil (2 tablespoons). The oil should cover the bottom of the pan.
19. Fry the envelopes over medium heat for about 30-40 seconds on each side, until golden. Fry all the envelopes in this way, adding oil as needed.
20. Serve lavash envelopes with minced meat, rice and cheese hot.
