Chicken broth with lavash dumplings

There is a dish in Jewish cuisine called "Kneidlach". These are dumplings made from flour obtained by grinding matzo.
Matzo is unleavened flatbread made from water and flour without salt. That is, if you grind matzo, you get flour. It is from this flour that kneidlach is prepared. Since I didn’t want to bake matzah myself, I found an excellent alternative - thin pita bread. The dumplings turned out excellent: tender and airy. Exactly what you need for chicken broth. This soup is a dietary dish and is suitable for baby food.
To prepare dumplings we will need: thin pita bread, egg, chicken broth, salt, ground black pepper and water.

Lavash - 300 grams;
Chicken broth - 2 liters;
Egg - 1 piece;
Salt - to taste;
Ground black pepper - to taste.

1. First of all, the pita bread needs to be dried. Then grind twice through a meat grinder and sift through a sieve.
2. Cook chicken (turkey) broth in advance. We are preparing dumplings. Pour 2/3 cup of lavash flour into a saucepan and add a glass of water at room temperature.
3. Mix. Leave for 30-40 minutes so that the flour swells and completely absorbs the water.
4. Then add a raw egg. Salt and pepper to taste. Mix. We get a liquid dough.
5. We begin to gradually add lavash flour until we get a dough from which you can roll a ball. You shouldn’t put in a lot of flour, the dumplings will be rubbery.
6. With wet hands, form small dumplings.
7. Boil water in a saucepan and add dumplings there. After 3-4 minutes they will emerge. Cook for another 5 minutes and remove.
8. Place the finished dumplings in the broth. Serve for lunch.
9. Simple, satisfying and very tasty. When you get tired of borscht, pea or vegetable soup, the recipe will come in handy.
