Quick recipe for delicious eggplants
My favorite pickled eggplant recipe. Snack for holidays and every day.
Ингредиенты
Eggplants - 700 g
For the brine:
Water - 1 l
Salt - 1 tbsp. l.
For the marinade:
Bell pepper - 350 g
Onion - 1 large
Garlic - 2 cloves
Fresh dill - 1 bunch
Apple cider vinegar 6% - 30 ml
Vegetable oil - 70 ml
Sugar - 1 tbsp. l.
Salt - 1.5 tsp.
Рецепт
1. Wash the eggplants, remove the skin.
2. Cut the eggplants crosswise into two parts, and then into 4 parts lengthwise.
3. Prepare the brine: bring water and salt to a boil.
4. Boil the chopped eggplants in boiling brine for 5-7 minutes. Then drain in a colander and cool.
5. To prepare the marinade, remove seeds from bell peppers and cut into strips. Peel the onion and cut into half rings. Finely chop the dill. Peel the garlic and chop it.
6. Combine sweet peppers, onions, garlic and herbs. Add vinegar, vegetable oil, salt and sugar. Mix.
7. Gently mix the eggplants with the marinade, cover with a lid, and leave for a day at room temperature.
8. Then put the pickled eggplants in the refrigerator.
Serve with meat or poultry.
