Langoustines on the fire

Spring is approaching and I really want to get out into nature.
But if someone who lives in an apartment has to wait for real warm weather to arrive, then someone living in a private house can afford to cook a dish on a grill over coals in their yard. That’s how it was with me, I wanted to cook langoustines on coals so much that even the falling snow didn’t interfere, and during cooking I had to cover the grill with myself from falling flakes. But fortunately, the langoustines take literally five minutes to cook, so the weather was not an obstacle!

Langoustines - 15 pieces
For the marinade:
Garlic - 6-7 cloves
Ginger - a small piece
Chili pepper - 1/2 pcs.
Cilantro - 1/2 bunch
Rosemary - 1 tsp.
Soy sauce - 3 tsp.
Vegetable oil - 3 tbsp.
Lemon juice - 1 tbsp. + zest of 1/2 lemon
Orange juice 1/2 orange

1. First of all, we will make a marinade in which we marinate the langoustines before cooking. Grind a peeled piece of ginger, garlic, chop cilantro and chili pepper.
2. Place everything in a bowl, add the remaining ingredients - zest, lemon juice, orange juice, rosemary, soy sauce, vegetable oil. By the way, I didn’t make the marinade very salty, so if you want a saltier taste, add more regular salt. Mix everything well.
3. Now let's prepare the langoustines themselves. Be sure to defrost them and then rinse them in water.
4. Cut the shell on the langoustine's tail to remove the intestine. This will also allow the langoustine meat to better absorb the marinade.
5. Carefully pry the black intestine with a knife and pull it out of the tail.
6. Place a layer of langoustines in a wide bowl and cover them with marinade.
7. Next is the second layer of langoustines and the rest of the marinade. Let them marinate for at least an hour, or maybe more - for example, up to three hours. During this time, you can do other things, and before cooking, light the coals in the grill, wait until they burn out, and when they are already smoldering, you can cook the langoustines.
8. Place the langoustines on the grill, cover with the top grill and secure so that they lie tightly.
9. Place the grate on the grill and cook the langoustines over the fire (or rather over coals) for two to three minutes on each side.
10. Remove the finished langoustines from the grill.
11. Sprinkle them with lemon and serve.
12. If you have the opportunity to go outside and cook something on the grill, then try cooking langoustines, a very tasty and delicacy dish!
