Fried meat and potatoes

Baked potatoes with fried meat, onions and garlic - inspired by the Georgian dish ojakhuri.
Potato slices with spices are baked in the oven, pieces of pork with onions are fried separately in a cauldron. Then the potatoes and meat are combined together, and after a couple of minutes the dish can be served. It turns out very tasty, and is not much more difficult to prepare than a roast.

Potatoes - 800 g
Pork - 600 g
Onions - 120 g
Garlic - 1-2 cloves
Ground paprika - 0.5 teaspoon
Ground coriander - 0.5 teaspoon
Granulated garlic - 0.5 teaspoon
Salt - to taste
Hot pepper (optional) - 1 pc.
Vegetable oil - 3 tbsp. spoons
To submit:
Red onion - 40 g
Fresh herbs (dill, parsley, cilantro) - to taste
Pomegranate seeds (optional) - for decoration

1. Turn on the oven, preheat to 180 degrees.
2. Peel the potatoes and cut into small slices. Season with salt, add dried garlic, ground coriander and paprika, stir. Drizzle 1 tablespoon of vegetable oil over the potatoes and stir.
3. Cover a baking sheet with parchment and place the potato wedges in one layer. Place the potatoes in a preheated oven and bake at 180 degrees for 40-45 minutes. The potatoes should become soft and browned.
4. Cut the meat into small pieces. Pour vegetable oil into a cauldron and heat over high heat. Place the meat in a cauldron and fry until golden brown, about 5-7 minutes. (Add crushed hot pepper to the meat if desired.) Transfer the fried meat to a plate and cover.
5. Peel the onions and cut into quarter rings. Place in the cauldron in which the meat was fried. Fry for 5 minutes over medium heat.
6. Return the meat to the cauldron and fry the pork and onions over medium heat until done. It took me 15 minutes.
7. Add baked potatoes to the cauldron with meat.
8. Add chopped garlic. Mix everything and cook for another 2-3 minutes.
9. Remove the cauldron from the heat. Divide the meat and potatoes among plates, sprinkle with herbs, chopped red onion and, if desired, pomegranate seeds.
