Many people’s favorite combination is potatoes with meat, or mashed potatoes as a side dish plus beef in sour cream sauce (beef stroganoff). I recommend choosing sour cream with a fat content of 20% or higher (15% leaves some sourness). If necessary, defrost the beef first.

Wheat flour serves as a thickener for sour cream sauce. The more flour and less liquid, the thicker and denser the gravy for beef stroganoff. Adjust to your liking. To prepare beef stroganoff with mashed potatoes, take the ingredients from the list.

Ингредиенты

Beef Stroganoff:

Beef - 350 g

Sour cream 20% - 150 g

Flour - 1 tbsp.

Water - 150 ml

Vegetable oil - 30 ml

Onion - 1 pc.

Salt, hot pepper - to taste

Puree:

Potatoes - 500 g

Sour cream - 1-2 tbsp.

Butter - 30 g

Salt - to taste

1. In a frying pan with the addition of vegetable oil, fry the onions until golden brown.

2. Divide the clean meat into bars, sprinkle with flour so as to cover each piece on all sides.

3. Add the flour-dusted meat to the transparent onion and mix.

4. Fry for a few minutes until slightly charred.

5. Pour in sour cream, water, salt, stir until the sauce is smooth.

6. Bring to a boil, reduce the temperature and simmer for about half an hour until the beef is soft. At the very end we pepper it.

7. At the same time, boil the peeled potatoes in salted boiling water until tender, drain the broth (reserve about 50-70 ml). Mash the potatoes with butter, sour cream and broth.

8. Bring to homogeneity and desired density.

9. Serve beef stroganoff with hot mashed potatoes, with herbs and pickles.
