Lamb stewed with tomatoes in Arabic style is a bright, juicy and rich meat dish for every day.
This morning I treated myself and my family to this delicious treat. Arabic-style lamb with tomatoes is a real traditional Arabic dish that is prepared in every family.
On Aid Kabir (a major Muslim holiday), the day begins with this dish in many Muslim families. For the holiday, it is usually prepared in huge cauldrons, which, it seems, can fit a whole lamb. At home they use a regular frying pan. The lamb turns out to be the most tender, spicy... Oh, you'll lick your fingers! Which, in principle, is what you have to do, since traditionally this dish is eaten with your hands - you break off pieces of pita bread and scoop up meat, tomatoes and onions with it.
So, everything in order. Cut the lamb into small pieces. She must be fat!

Lamb - 600 g
Onions - 500 g
Tomatoes - 400 g
Bell pepper - 300 g
Garlic - 1 head
Olive oil - 70 ml
Salt - to taste
Chili pepper - 1/2 pcs.

1. Peel the onion, garlic and chili pepper and chop finely.
2. Pour olive oil into a frying pan and fry the meat until beautifully golden brown. Then add diced onion, garlic and chili pepper. Continue frying for about 5 minutes.
3. Don't be confused by the amount of onions. Fatty lamb loves onions, and this is what makes the dish special. Chop the tomatoes and add to the meat. Also add chopped bell pepper.
4. Fill the meat with water and close the frying pan with a lid. Let the meat simmer until the water has completely evaporated. At this stage you need to add salt.
5. It happens that the lamb is a little tough and after evaporation the meat is not as tender and soft as we would like. So, again add a full frying pan of water and simmer over low heat until the liquid has completely evaporated.
