Fried pies “Like fluff” with kefir

Many of my friends are hesitant to make homemade pies, believing that yeast dough is something out of this world, something heavy and immense.
I’m already tired of telling them that it’s simple, easy and very exciting. The main thing in working with any test is not to rush, you need to put all your soul and love into it.
To prepare fried pies “Like fluff” with kefir, we will use dry fast-acting yeast. And cabbage will serve as the filling. Although with this dough you can use not only cabbage filling, but also any other: meat, potato, mushroom, egg, etc.
Ингредиенты
Kefir – 250 g
Dry yeast – 10 g
Egg – 2 pcs.
Sugar – 1 tbsp.
Flour – 400 g
Salt - to taste
Vegetable oil – 1 tbsp.
For filling:
Cabbage – 400 g
Carrots – 1 pc.
Water – 50 ml
Tomato juice – 50 ml
Salt - to taste
Ground black pepper - to taste

1. Pour room temperature kefir into a deep bowl. Add chicken eggs, salt and sugar. Mix everything thoroughly. Pour in mustard oil. It can be replaced with olive or sunflower.
2. Stir again and add fresh, high-quality dry yeast.
3. Add 2-3 tbsp. sifted flour, shake a little, cover with a napkin and leave in a warm place for 15-20 minutes. During this time, the yeast is thoroughly activated, the mass will increase in volume and rise into a lush head.
4. Mix everything thoroughly with a spatula and begin adding the twice-sifted flour in parts. It is necessary! In this way, the flour will be enriched with oxygen and will have a beneficial effect on the dough and the flour product itself in the end
5. After each addition of flour, knead the dough thoroughly. When all the flour is gone, you don’t need to stop, you need to continue kneading for 15-20 minutes.
6. And only then, when the dough is thoroughly kneaded, put it in a bowl, cover with a napkin or cling film and leave in a warm place for 15-20 minutes.
7. At this time, prepare the filling. It will require the following ingredients.
8. Place the shredded cabbage in a cauldron, add water, and stirring occasionally, simmer under the lid closed for 15 minutes. Then add coarsely grated carrots, add salt and ground black pepper to taste.
9. And after 5 minutes, pour in the tomato juice. Continue simmering without a lid until the liquid has completely evaporated and until a beautiful, even color occurs. The filling should cool or be warm, but not hot.
10. Now the dough has already matured: it has risen well in volume, has become very fluffy, airy, and light.
11. It should be kneaded thoroughly.
12. Then cut into 2-3 parts for convenience and alternately roll each part into a roller. Cut it into equal parts. The size of the pie will depend on the size of the part.
13. Roll each part into a flat cake, but not too thin, about 5-7 mm thick, and generously place the prepared filling in the center. Pinch the edges. Press on top with your palm, giving it a pie shape. Prepare the remaining pieces in the same way.
14. It’s good to heat a frying pan with vegetable oil and lay out the pies that were made first, since they have already rested and fit well.
15. Fry the pies on both sides until golden brown over medium heat or below medium.
16. Place the finished, rosy and delicious pies on a napkin to remove excess oil.
17. They can be served immediately: golden-brown, crispy crust, with tender, airy dough, juicy and aromatic filling... What could be tastier? Serve fried pies “Like Pooh” made with kefir with sour cream - your household will not be able to resist such a luxurious dish.
