Take small semolina, it swells well and the pancakes from it turn out simply incomparable. Take all the necessary ingredients for lean carrot pancakes with semolina and flour. Peel the carrots, wash and dry.

Semolina - 160 g

Wheat flour - 50 g

Warm water - 250 g

Carrots - 80 g

Sugar - 1 tbsp.

Salt - a pinch

Dry yeast - 1 tsp.

1. Measure the required amount of semolina, flour into a deep bowl, add salt and sugar, as well as an incomplete spoon of yeast.

2. Pour in warm water.

3. Mix the dough until smooth. The dough will turn out unusual, but don’t let this bother you, you just need to let the semolina swell well.

4. Cover the bowl with the dough with cling film without access to air and place in a warm place for at least 30 minutes.

5. In the meantime, grate the carrots on a special grater into thin strips.

6. After time, the semolina will swell perfectly, and the dough will increase significantly in size.

7. Place grated carrots into the dough.

8. Mix everything very carefully and let the dough stand for a few more minutes.

9. Heat a frying pan, pour in a little vegetable oil, place a heaping tablespoon of dough into it and bake over moderate heat for 3 minutes on each side. Do not add too much oil, as it will be instantly absorbed by the pancakes.

10. Place pancakes on paper towels to remove excess oil.

11. Lenten carrot pancakes are ready - fluffy, tasty and filling. Serve with jam or sweet syrups.
