Turrón is a traditional Christmas sweet in Spain, as well as in some other countries.
Prepared from honey, sugar, egg white, nuts. There are different types of turron. For example, soft turron from the Spanish city of Gijon (Turrón de Jijona). Prepare all the ingredients to prepare soft Spanish (Gijon) turron.
Suitable nuts include almonds, peanuts, hazelnuts or walnuts. You can buy already roasted nuts or dry them yourself in a dry non-stick frying pan.

Roasted almonds – 100 g
Roasted hazelnuts – 100 g
Egg white - 2 pcs.
Sugar - 100 g
Liquid honey – 100 g
Ground cinnamon - to taste
Waffle cake (optional) - 1 pc.
Рецепт
1. How to make soft turron: Place the nuts in a blender.
2. Grind the nuts for 10-15 seconds. Try to keep whole pieces.
3. Line the turron mold with waffle crust to make it easier to remove the finished product from it after hardening. (You can also use edible rice paper.)
4. Pour honey into a saucepan and heat over low heat, stirring. Bring to a boil. Add sugar, stir until sugar dissolves.
5. Beat the egg whites until thick foam, the peaks of the whites should not settle.
6. Add nuts to the whipped whites, mix gently.
7. Add nut butter to the honey and cook for another 10 minutes over very low heat. Add cinnamon to taste.
8. The mass will slightly change color to caramel and thicken a little.
9. Spread the resulting mixture in an even layer into the mold. Leave the Gijon turrón to set in a cool place, but not in the refrigerator.
10. Turn the pan over, placing the frozen turron on a cutting board.
11. Before serving, cut the soft turron into squares/sticks. I decorated the soft turron from Gijon with flaked almonds.
