Lenten salad with cod liver

You can prepare many salads with cod liver, but this salad, in my opinion, is one of the simplest options.
This does not make it boring and tasteless; on the contrary, the salad turns out to be very interesting and harmonious. Its huge advantage is that the ingredients for its preparation are always available at home, and such a salad can be prepared on certain days during Lent. In addition, this potato salad can replace lunch or dinner, because it is very filling. Try making this salad, there is a chance that you will like it and even want to offer it to your guests.
Ингредиенты
Cod liver - 120 g (I have a jar weighing 185 g)
Pickled cucumbers - 1 pc.
Onions - 1 pc.
Boiled potatoes - 2 pcs.
Fresh herbs and green onions - 30 g
Mustard - 1 tsp.
Salt and ground black pepper - to taste

1. So that the onion does not taste bitter and has a “softer” taste, you need to pour boiling water over it, first peel it, and cut it into rings. You can also marinate it if time permits.
2. Choose suitable dishes for the salad - plate, salad bowl. Peel the potatoes and cut into slices.
3. Cut the pickled cucumbers into circles or semi-circles, depending on the size.
4. Drain the water or brine from the onion and add the onion slices to the salad.
5. Remove the cod liver from the jar, cut into smaller pieces and add to the salad.
6. Wash the green onions under running cold water and dry or shake to remove any liquid. Chop the green onions and sprinkle them on the salad.
7. 2 tbsp. Pour the oil in which the liver was in into a gravy boat, add mustard, salt, freshly ground pepper or a mixture of peppers and mix thoroughly.
8. Season the salad with sauce and sprinkle with chopped fresh parsley and dill.
9. Serve a light lean salad with cod liver immediately after preparation; you can prepare it long before dinner and let it sit in the refrigerator, but it is better to add fresh herbs before serving. Bon appetit!
