Ruddy, fragrant buns with shortbread crumbs.
Soft, airy. The buns are very tasty! The most delicate yeast dough with a wonderful vanilla aroma. I am sure that you and your loved ones will like it, and you will make not only buns from it, but also pies, rolls and sweet pies.
Ингредиенты
Flour - +/- 480 g
Warm milk - 200 ml
Dry instant yeast - 7 g (pressed - 20 g)
Sugar - 100 g (or 70 g - will be less sweet)
Butter - 60 g
Egg - 1 pc.
Egg white - 1 pc.
Salt - 1 tsp. no slide
Vanilla sugar - 8 g (2 tsp)
Unscented vegetable oil - 1 tbsp. l.
For the streusel:
Butter - 10 g
Sugar - 10 g
Vanilla sugar - 1 tsp.
Flour - 20 g
To grease the buns:
Yolk - 1 pc.
Milk - 1 tsp.

1. Warm milk, yeast, sugar, mix and leave for 15 minutes, give time for the yeast to activate.
2. In another bowl, whisk egg + white, salt, vanilla sugar, melted butter.
3. Combine the egg-butter mixture with the yeast mixture and stir.
Do not forget that all products for yeast dough must be at room temperature.
4. Then add the sifted flour in parts and knead the dough. Do not rush to add all the flour indicated in the recipe, flour is different with different moisture content and you may need a little less or more than indicated in the recipe. Grease the dough and bowl with vegetable oil. Cover the dough with plastic wrap and leave in a warm place for 1-1.5 hours. During this time, the dough should double in volume.
5. This is how the dough fits, you can make buns.
6. Lubricate the working surface and hands with vegetable oil. Lay out the dough, knead it, cut the dough into small pieces. We form balls (12 pieces, approximately 75-80 g), do not add flour.
7. Grease a mold (33x24 cm) with butter and place future buns in it. Cover with film and leave for another 30-40 minutes to rise.
8. Prepare crumbs. In a bowl, mix flour and sugar. Add chilled butter, grind into crumbs.
9. Brush the buns with egg (mix the yolk with 1 teaspoon of milk) and sprinkle crumbs on top. Bake in a preheated oven at 180 degrees for 20-25 minutes. Place the finished buns on a wire rack and cool.
