If you're a healthy eater or on a gluten-free diet, you'll love this muffin recipe. They are soft, tasty and healthy.

If desired, you can mix flour in equal proportions with wheat and add a little vegetable oil, the muffins will turn out even tastier and softer, but in this case you can forget about a gluten-free diet. I liked both options, although from pure rice and without oil they turn out a little rubbery, plus the cuffs are difficult to remove, keep this in mind.

Ингредиенты

Banana - 1 pc.

Chicken egg CO - 2 pcs.

Baking powder - 1 tsp.

Yogurt - 150 g

Rice flour - 180-200 g

Maple syrup (stevia, honey) - 2 tbsp.

1. Peel a large banana, cut into pieces, and place in a deep bowl.

2. Mash the banana with a fork, beat in two large eggs.

3. Add any yogurt, add baking powder and stevia or add maple syrup (agave syrup or liquid honey), continue whisking.

4. Measure out the required amount of flour and continue mixing the dough with a fork or whisk. The dough should be as thick as pancakes.

5. Line the muffin tin with paper cuffs, place a tablespoon of dough into each cuff (2/3 of the height) and place in the oven preheated to 190 degrees for 20-25 minutes in the top/bottom mode. Check readiness with a match or toothpick.

6. PP rice flour muffins with banana (gluten free) are ready. Cool them, brew your favorite delicious tea and you can have a family tea party.
