Catalan potato soup with beans

Amazingly light and nutritious puree soup! Quick to prepare and quite inexpensive if you can get the beans inexpensively.
For most, beans are a symbol of poverty. The phrase "sitting on beans" is used to describe difficult times when one is left with nothing. Obviously, this is an outdated phrase, since personally, from my own experience, I was faced with the fact that beans are not so easy to find, firstly, and secondly, they are not so cheap in cost. I immediately wanted to organize a bean patch at the dacha. And after tasting the wonderful low-calorie Catalan potato puree soup with beans, I was finally confirmed in my desire to find beans to plant.
I didn’t take the beans dry, they were soft and tender. The weight of potatoes is indicated in peeled form. The quantity of products is relative; you can take more potatoes and beans to get a thicker soup.
Ингредиенты
Potatoes - 200 g
Beans - 185 g
Onion - 150 g
Vegetable broth or water - 800 ml
Ground black pepper - 0.25 tsp.
Salt, fresh herbs - to taste
Vegetable oil - 1-2 tbsp.
Рецепт
1. Peel the onions, chop finely and place in a pan with vegetable oil. Add ground black pepper. Place on the fire and, stirring, fry the onion until translucent, soft and lightly browned.
2. Add peeled and randomly chopped potatoes to the onion.
3. Pour boiling vegetable broth or water, add salt and after boiling, cook for 20-30 minutes until the potatoes and beans are fully cooked.
4. Puree the contents of the pan in any convenient way. Using an immersion blender or transferring the ingredients into a bowl.
5. Add clean chopped herbs to taste.
6. Catalan potato puree soup with beans is usually served hot, flavored with cream (sour cream, I believe, can also be used).
