Pies in the form of flatbreads, with thin dough and juicy filling, will definitely appeal to connoisseurs of national Ossetian cuisine.

Ossetian flatbreads, also known as amazing Ossetian pies, can be prepared not only according to the authentic recipe using water, but also in a richer version - using milk or kefir.

Ossetian pies for festive feasts are always baked in odd quantities and served in the same quantity. In the even version, pies are baked only for sad and mourning dates.

The dough recipe is based on 3 pies. To knead the dough for Ossetian kefir flatbreads, you will need the following ingredients.

Dough for 3 pies:

Flour - 500 g

Kefir - 200 ml

Water - 100 ml

Vegetable oil - 2 tbsp.

Yeast - 8 g

Sugar - 1 tsp.

Salt - 0.5 tsp.

Filling:

Ground beef - 0.8-1 kg

Onion - 1 pc.

Garlic - 2 cloves

Boiled water - 100 ml

Coriander - 1 tsp.

Ground pepper - to taste

Salt - to taste

Butter - for lubrication

1. Combine kefir, water, salt and sugar in a bowl. Stir.

2. Sift flour and add yeast. My yeast combines with flour. Knead soft and viscous dough.

3. The dough should not be filled with flour; it should remain viscous. While kneading, add vegetable oil. Why do you need to make soft dough? So that in the future, when molding, you do not need to use a rolling pin. Ossetian pies are never rolled out with a rolling pin; the dough is distributed only with palms and fingers. And for this you need the dough to be soft. Cover the dough and leave in a warm place to rise.

4. Meanwhile, prepare the filling. To do this you will need the following products. I prepared pies with different fillings, but in the recipe I indicate the number of ingredients for three pies.

5. Combine the fatty minced meat with finely chopped onion, crushed garlic, salt, pepper and coriander or fresh chopped cilantro. Pour in boiled water for juiciness, and if you have it, then broth. Knead the minced meat until it becomes smooth and juicy.

6. Place the risen dough on the table, generously sprinkled with flour. The dough is quite soft and still sticky. Using flour, mix it on the table and divide into three equal parts.

7. Form each part into a flat cake, stretching it on the table. Place the filling in the center in the form of a slide.

8. Gather the edges of the dough towards the center, connect them, sprinkling with flour. Flatten the ball slightly and turn it over. Then, carefully stretching, form a cake. Usually, a couple of round boards are used for this, and they are used to turn the pie over. I don’t have such boards, so the easiest way is to transfer the ball to a baking sheet or mold and form it completely there. The oven should be heated to 200 degrees.

9. You need to ensure that the Ossetian kefir flatbread turns out very thin and the filling is distributed evenly without tearing the cake. Make a hole in the center for steam to escape. There is no need to lubricate the cake with anything. Place in the oven to bake for 15-20 minutes.

10. I used the same dough to make a pumpkin pie, like this.

11. Immediately grease the finished pie with butter. Bake the remaining flatbreads.

12. Ossetian kefir flatbreads are ready. Serve them by cutting them immediately. Delicious!
