There are a huge number of khachapuri recipes. They differ in both the amount of ingredients and the baking method.
Housewives in almost every corner of Georgia have their own khachapuri recipe. Classic khachapuri is prepared with cheese. The dough can be yeast, or it can be unleavened, like matsoni. I suggest you bake a classic version of Georgian khachapuri with cheese on unleavened dough. My family liked this option the most, the dough turns out airy, there’s a lot of cheese, it’s simply delicious!

Flour - 400 g
Matsoni - 250 g
Suluguni cheese - 250 g
Soda - 1 tsp.
Egg - 1 pc.
Ghee - 30 g

1. Prepare matsoni dough for khachapuri. Pour matsoni or kefir into a bowl, beat in one egg.
2. Add baking soda or baking powder.
3. Melt the butter a little in the microwave and add to the dough.
4. Now gradually add flour and knead the dough.
5. The dough should not stick to your hands, but it should not be hard either. Let the dough rest for 20 minutes, covered with a towel.
6. Roll out the dough into a circle, 4-5 cm larger than the pan. And put all the cheese in the middle.
7. Now we gradually gather the edges of the dough in the center and press them together.
8. Turn the dough over so that the gathered center is at the bottom. We make a small hole on top for steam to escape.
9. Roll out the cake well and place it on a baking sheet covered with parchment paper. I also sprinkled some cheese on top.
10. Bake khachapuri on matsoni in an oven preheated to 250 degrees for 5-7 minutes. Georgian Khachapuri with cheese is ready. Serve hot.
