Рецепт

1. Let's prepare the dough. Sift 500 grams of flour into a mixer bowl, add 1 teaspoon of salt, 2 teaspoons of sugar, 1 teaspoon of dry yeast, mix.

2. Mixing with a mixer at low speed, add 2 eggs, 250 milliliters of milk, add 100 grams of soft butter and knead the dough for 7-8 minutes.

3. Cover with cling film and leave at room temperature for one hour.

After one hour, put the dough on the table, fold a third of the dough on each side towards the middle. Return the dough to the bowl, seam side down, cover with cling film and leave at room temperature for another hour.

4. Let's prepare the filling. Pour 400 grams of toasted chopped walnuts into a bowl, add 200 grams of sugar, 0.5 teaspoon of cardamom, mix and set aside.

5. Place the risen dough on the table, divide it into 10 parts - 2 slightly larger and 8 identical smaller ones. Roll each piece into a ball, cover with a towel and immediately begin rolling out.

6. First of all, roll out one of the large pieces for the bottom layer.

7. Place the rolled out layer on a baking sheet greased with vegetable oil (size 20X30 centimeters). Grease the dough with melted butter, sprinkle with the prepared nut filling, distributing it so that we have enough for 9 layers.

8. Place a smaller layer of dough on top of the filling, grease it again with oil, and sprinkle with filling.

9. And so on. The last layer is made from a larger piece of dough.

10. Cover with cling film and leave for 30 minutes to proof.

11. After 30 minutes, brush the top layer of dough with yolk.

12. Using a very sharp knife, cut into diamonds with a side of 4-5 centimeters.

13. Place half a walnut on each diamond. Bake the rich baklava in a preheated oven at 200 degrees Celsius for 20 minutes.

14. Remove the baklava from the oven and pour in melted butter. In total, we need 250 grams of melted butter to lubricate the layers and pour. Reduce the oven temperature to 180 degrees Celsius and return the baklava to the oven for another 35-40 minutes.

15. While the baklava is baking, prepare the syrup. Pour 200 grams of sugar into a saucepan, add 200 milliliters of water, bring to a boil and cook over very low heat for 10 minutes.

16. Remove from heat, add 100 grams of honey to the syrup, stir.

17. Remove the baklava from the oven and check its readiness with a wooden stick. Pour the prepared syrup over the baklava and leave to cool.

18. Cut the finished cooled baklava again with a sharp knife, place it on a dish and serve the delicious puff pastry baklava for tea or coffee.
