Homemade orange ice cream "Semifreddo"

Delicious ice cream at home.
This homemade ice cream recipe is for those who don't like too sweet desserts. Here I reduced the sugar to a minimum. The ice cream is aromatic and has a pleasant fresh taste. Ice cream is prepared according to the semifreddo principle, so it does not require an ice cream maker.
Ингредиенты
Heavy cream for whipping (chilled) - 200 ml
Orange juice - 100 ml (1 orange)
Zest of half an orange
Eggs - 2 pcs.
Sugar - 75 g (for those with a sweet tooth +1 tbsp.)
Vanilla sugar - 1 tsp.
Рецепт
1. Mix eggs with sugar, vanilla sugar, zest and orange juice.
2. Place in a water bath.
Stirring, heat to 72°C (if you don't want to use a thermometer, measure the temperature with your finger - it should be very hot).
3. Strain.
4. Place the bowl in a bowl of cold water or, better yet, ice. Beat until cooled completely (about 7-8 minutes). The mass will increase three times, take this into account when choosing a bowl.
5. Whip the cream until fluffy (not thick). Mix the whipped cream with the orange mixture on low speed mixer.
6. Place in a mold (if the mold is not silicone, you can cover it with film). Cover the mass with film in contact with the surface. Place in the freezer until completely set (about 5-6 hours).
7. There is no need to stir the ice cream: large ice crystals will not form, but you still cannot get rid of small ones.
