Chicken satsivi

Satsivi is a famous nut sauce of Georgian cuisine.
It just so happens that satsivi is the name given to a chicken fillet dish drenched in this delicious nut sauce. Chopped walnuts with herbs and spices make this dish unique. On holidays and weekdays, satsivi with chicken will always be welcome on your table.
Ингредиенты
Products (for 6 servings)
For the sauce:
Fresh cilantro - 50 g
Garlic - 6 cloves
Walnuts - 450 g
Yellow onions - 3 pcs.
Imeretian saffron - 4 teaspoons
Khmeli-suneli - 6 teaspoons
Ground chili pepper - 1 teaspoon
Ground coriander - 1 teaspoon
Red wine vinegar - 3 tbsp. spoons
Ground black pepper - 1/2 teaspoon
Vegetable oil - 2 tbsp. spoons
Salt - 1 teaspoon
Chicken broth - 1.5 l
To prepare the chicken and broth:
Chicken - 1.5 kg
Bay leaf - 2 pcs.
Red onion - 1 pc.
Black peppercorns - 10 pcs.
Allspice peas - 4 pcs.
Parsley stems - 10 g
Water - 2.5 l
Salt - 1 teaspoon

1. First make chicken broth. To do this, pour 2.5 liters of water over the chicken, bring to a boil and skim off the foam.
2. Add peeled red onion, black and allspice peas, salt and parsley stems to the chicken.
3. Cover with a lid and simmer the chicken broth for 40 minutes over low heat. Then add bay leaf to the broth and cook for another 10 minutes under the lid.
4. Proceed to preparing the sauce. Grind the cilantro, peeled garlic cloves and walnuts using a meat grinder.
5. Peel the onion and grate it on a fine grater.
6. Heat a frying pan with vegetable oil. Simmer the onion for 4-5 minutes over low heat. The onion should become soft and transparent.
7. Place the stewed onion and prepared nut mass into the pan. Gradually add chicken broth to the pan and stir until smooth.
8. Add ground black pepper, ground coriander, Imeretian saffron, suneli hops, red chili pepper, vinegar and salt to the nut sauce. Warm the sauce over low heat for 3-5 minutes, but do not boil. The consistency of the sauce should be like thin sour cream.
9. Cut the boiled chicken, separate the meat from the bones, remove the skin, cut the fillet into pieces. Place the chicken on a plate and pour satsivi sauce over it. Place chicken satsivi in the refrigerator for 1-2 hours.
10. Serve satsivi with fresh vegetables, herbs and pita bread.
