Salad with duck breast and pear

An assortment of lettuce leaves and herbs, an assortment of different cheeses and a pear are a harmonious basis for an interesting salad, to which I suggest adding juicy duck breast.
For the salad with duck breast and pear, prepare the ingredients according to the list. Choose cheeses to your taste!
I recommend using breast for salad without oily skin. It is better to cut this skin into pieces and render the duck fat out of it. Duck fat is useful for frying a variety of dishes, as well as for preparing French stew - duck confit.
Ингредиенты
Duck breast – 300 g
Adyghe cheese – 100 g
Blue cheese – 50 g
Pear – 1 pc.
Lettuce – 10-12 leaves
Arugula – 1 handful
Walnuts – 3-4 pcs.
Vegetable oil - for frying
Salt – 1 pinch
Olive oil – 2-3 tbsp.
Grainy mustard - 1.5 tbsp.
Soy sauce – 1 tsp.

1. Rinse fresh herbs with cold water and dry. For the dressing, stir together olive oil, grain mustard and soy sauce. Use my proportions as a guide, but you can use them to your liking. Beat lightly.
2. Lightly salt the duck breast and fry over high heat in a frying pan in vegetable oil, first for 3 minutes on each side. Then cook over low heat, covered, until done. For pink-cut breasts, it will take 8-10 minutes, turning once during the process.
3. Assemble two servings of salad. Place lettuce, torn into pieces, on dishes.
4. Place the duck breast slices next and accompany them with dressing.
5. Cut both types of cheese into cubes.
6. Pear - the same cube.
7. Add them to the salad.
8. Sprinkle with arugula leaves, chopped walnuts, stir, and the salad with duck breast and pear is ready.
9. The salad harmoniously combines assorted cheeses, pear and duck breast... It seems simple, but I was impressed!
