Do you remember what they fed you in kindergarten? I remember very well.

I was probably very lucky, because the taste of pancakes, rolls, potato casserole, and many other dishes was imprinted in my memory. There were wonderful chefs in my kindergarten, creating simple and tasty masterpieces.

Today we are preparing a tender potato casserole with boiled meat according to technological map No. 97. The technological map must indicate the gross and net weight of the products, as well as the yield of the finished dish. In my recipe, I present the ingredients in already purified form, that is, I indicate the net weight. You can round the values so as not to suffer))

But no matter what recipe you cook according to, you still need to take into account some nuances so that the dish is sure to turn out. For example, potatoes come in different varieties - drier and wetter. Hence, the amount of milk can be slightly reduced so that the casserole is easily removed from the mold and does not spread. Therefore, look already on the spot.

For a finished dish weighing 1 kg (net weight):

Potatoes - 595 g

Beef (I category) - 378 g

Onion - 50 g

Egg 1C - 50 g

Milk - 220 g

Vegetable oil - 10 g

Butter - 20 g

Iodized table salt - 5 g

1. Peel the potatoes and boil until tender. Salting is not necessary at this stage.

2. Pour cold water over the beef and cook. After boiling, skim off the foam and cook at low simmer for 20 minutes.

3. Add whole peeled onions to the pan and continue to cook until the meat is cooked. To determine whether the meat is cooked, you need to pierce it with a fork or knife. If a fork or knife easily enters the meat without resistance, it is ready.

4. Completely drain all the water from the boiled potatoes and mash them. Cool slightly.

5. Pour in hot milk. Do not pour everything at once, but a little at a time so that the consistency can be controlled.

6. Add a raw egg and stir everything thoroughly. Now you can add salt to the mashed potatoes.

7. Remove the boiled meat and onions from the pan and grind everything together in a meat grinder. If it turns out a little dry, then pour in a little broth in which the meat was cooked. Be sure to salt the finished minced meat.

8. Prepare a casserole dish. It would be better if it was non-stick. Grease the pan with vegetable oil and add some of the mashed potatoes. Smooth it out into shape.

9. Place the prepared minced meat on top of the mashed potatoes.

10. And then - the final layer of mashed potatoes. Grease the surface of the casserole with melted butter. Place in an oven preheated to 220-230 degrees and bake for 20 minutes until lightly browned. According to the technological map, the height of the casserole should not exceed 4-5 cm.

11. Remove the finished casserole from the oven and let it cool slightly to a warm state so that it stabilizes. Then you can carefully turn it over onto a plate and cut it into portions. Or remove portioned pieces directly from the mold.

12. Potato casserole with minced meat, like in kindergarten, is ready. You can serve it with sour cream, tomato sauce, and melted butter. Enjoy!
