I suggest you prepare a very tasty shortbread pie with cottage cheese and cherries.
In my opinion, this is one of the most delicious summer pies, since you can make it with any berry and it will always be very tasty. I really like it with cherries and this time I will cook with them, but you can use absolutely any berries at your discretion. For the test:
Flour - 240 g
Butter - 150 g
Sugar - 100 g
Baking powder - 1 tsp.
Egg - 1 pc.
For filling:
Cottage cheese 9% - 500 g
Sour cream - 100 g
Sugar - 100 g
Eggs - 2 pcs.
Cherry - 300 g

1. Sift flour with baking powder into a dry bowl, add sugar and cold butter cut into pieces.
2. Grind the ingredients into crumbs, then add one egg and mix again.
3. Gather the dough into a ball, wrap it in cling film and put it in the refrigerator for 30-40 minutes.
4. During this time, rinse the cherries and remove the pits. Place cottage cheese in a bowl, add sour cream, sugar and two eggs. Mix the mixture a little with a spoon.
5. Then, using an immersion blender, beat the mixture until smooth.
6. Line the bottom of a mold with a diameter of 22 cm with parchment, remove the dough from the refrigerator and roll it into a circle. Place the dough into the mold and use your hands to form sides 3-4 cm high. The dough can be pricked with a fork.
7. Carefully pour the curd filling into the mold. Place cherries on top.
8. Preheat the oven to 180 degrees and cook shortbread pie with cottage cheese and cherries for 50-60 minutes. The sides should be browned and the filling should be set.
