Prepared from a combination of fresh and dried herbs, garlic, vegetable oil and lemon juice, the marinade allows you to give chicken meat tenderness, juiciness, and a delicious aroma and taste with minimal effort. Chicken fillet/chicken – 800 g
Parsley/coriander – 1 bunch (30 g)
Green onions – 3 stalks
Garlic – 3 cloves
Hot pepper – 1 pc. small size
Lemon zest - 1 pc.
Lemon juice - 0.5 pcs.
Olive oil - 4 tbsp.
Salt - 1 tsp.
Mixture of Italian herbs – 3 tsp.

1. To prepare the marinade you will need the components indicated in the list.
2. Cut the chicken fillet into small pieces.
3. Finely chop the parsley, green onions, garlic and seeded hot pepper. Finely grate the zest of 1 lemon. In addition to parsley and onions, you can add fresh or dried herbs (rosemary, thyme, mint) to the marinade.
4. In a mortar or blender bowl, combine hot pepper, garlic, lemon zest and 1 tsp. salt. Grind the mixture with a pestle until the garlic releases juice and the mixture turns into a viscous paste, or beat everything with a blender for 30 seconds.
5. Add green onions, parsley and dried herbs. Pour in olive oil and lemon juice.
6. Grind the mixture in a mortar for 2-3 minutes or beat in a blender for a few more seconds until smooth.
7. Add marinade to chicken fillet pieces.
8. Mix everything well and leave the mixture at room temperature for 1 hour. Marinate larger pieces of chicken for 6-8 hours in the refrigerator.
9. At the end of the marinating process, fry the pieces of chicken fillet or bake at 180 degrees for 30-35 minutes until cooked.
