Salad with liver and pickled mushrooms

Traditional Belarusian salad with liver and mushrooms is prepared with pickled cucumber and fried mushrooms, but I decided to replace them with fresh cucumber and pickled mushrooms, deciding that mayonnaise would add the most calories anyway!

But I increased the color scheme a little by adding canned corn and red onions - it turned out quite colorful and bright. The taste of the salad was sweetish and velvety and my family really liked it, and they asked me to create it again for the next celebration! So I am happy to share the recipe with you. Prepare the necessary ingredients: rinse the cucumber in water, boil the liver for 15 minutes until tender, and boil the chicken egg for 12 minutes.

Ингредиенты

Chicken liver - 200 g

Marinated mushrooms - 50 g

Cucumber - 1 pc.

Canned corn - 3 tbsp. l.

Red onion - 1 pc.

Chicken egg - 1 pc.

Mayonnaise - 2 tbsp. l.

Salt - 2 pinches

Рецепт

1. Cut the cucumber in half flat, and then into slices and place in a container.

2. Cut the boiled chicken liver into large pieces and add to the container with the cucumbers.

3. Then cut the marinated mushrooms (champignons) into halves or quarters if they are large. You can use pickled oyster mushrooms and even butter mushrooms - it will still be very tasty!

4. Then add canned corn.

5. Peel the red onion, rinse in water and cut into half rings, adding it to the salad along with salt.

6. Grate the boiled egg on a fine grater, and place mayonnaise on it.

7. Mix the salad with liver and mushrooms and serve it to the table before the cucumber releases its juice.
