Vegetarian sauerkraut soup

Even without meat you can make delicious cabbage soup.
Sauerkraut gives a pleasant sourness, and tomatoes add flavor. If you do not like sour cabbage soup, the acidity can be reduced by soaking the cabbage for several hours and rinsing and changing the water several times during the soaking process. We don't use tomato paste today; today we have fresh tomatoes instead. You can use fresh greens (I used dry dill).
Let's prepare the ingredients for vegetarian sauerkraut cabbage soup. Instead of dried roots, you can use fresh ones. Today I have a mixture of dried parsley and celery roots. If you have parsnip root, you can add that too.

Water - 1 l
Sauerkraut – 150 g
Potatoes - 100 g
Salt - to taste
Onion - 50 g
Carrots – 50 g
Tomato – 100 g
Dried roots (parsley and celery) - 5 g
Sunflower oil – 50 ml
Рецепт
1. I won’t soak the cabbage, but I will wash it several times.
2. Peel the potatoes and cut them into small cubes. Grate the peeled carrots and chop the onion finely.
3. Pour water into the pan, add cabbage and roots.
4. Immediately add the potatoes. Add salt and put on fire. Cook for 40 minutes from the start of boiling.
5. Meanwhile, fry the onions and carrots in sunflower oil.
6. Grate the tomato; do not use the skin.
7. Add the tomato to the fried carrots and onions and fry together for another 7 minutes, stirring.
8. Add the fry to the pan and cook the vegetarian cabbage soup for another 15 minutes.
9. At the end, add fresh or dry herbs and pepper. Let's try the cabbage soup; if necessary, add salt to taste.
