I don’t know about you, but I usually try to prepare some simple dish for dinner that doesn’t require much effort on my part. I prefer dishes that need to be stewed; they will be easier on the stomach, and the process of stewing itself makes meat dishes more tender in structure.

Stewed pork with vegetables and curry seasoning is a completely uncomplicated and very tasty dish. It would seem that there is something special here - pork with vegetables, but my husband asked me to add a little curry powder to the dish, I somehow doubted that it would turn out very tasty, but I added it... and did not regret it! It's very tasty and aromatic!

After that time I cooked this dish several more times and this is what I came to: for this dish you need to take pork with streaks of fat, I think that the neck or tenderloin is best suited. You have to be careful with curry powder. I have several types of curry powder, one is quite spicy, my husband liked the dish with it, I prefer a more mild curry. The amount of curry is at your discretion, you can add a pinch, you can add a teaspoon, it all depends on the preferences of your household.

Pork (pulp) - 400 g

Onions - 1 pc.

Bell pepper - 1 pc.

Carrots - 1 pc.

Curry powder - 1 tsp. (more possible)

Olive oil - 1.5 tbsp.

1. Cut the pork into small pieces

2. Heat vegetable oil in a saucepan or deep frying pan. Fry the pieces of meat on both sides over high heat until caramelized.

3. Add curry seasoning, salt and pepper to taste.

4. Peel the onion and cut into half rings. Cut the bell pepper into large cubes, first removing the tail and seeds. Peel the carrots and cut into slices.

5. Place vegetables with meat and spices. Add enough water to cover the meat. Let the water boil, then reduce the heat to low, cover the saucepan or frying pan with a lid and simmer the dish for 40-50 minutes.

6. During this time, the pork will become tender, the vegetables will be soaked in the sauce, and as a result you will get a delicious dish for dinner. Serve stewed pork with vegetables and curry seasoning with rice.
