Kulesh, according to the wiki, is a liquid stew made from lard with millet and the addition of other ingredients. It was in this form that this soup or gruel originated, and it was originally prepared over a fire during hikes or field work.

Therefore, we can add whatever our heart desires to this very recipe, just not to forget about the main components - millet cereals and lard. Lard can also probably be anything, but it is logical to assume that it was originally salted, because... salted lard is still stored better and longer than fresh lard. Dill is a spice that has been common in villages for a long time, so its greens will not be superfluous in the soup.

Millet - 1/3 cup

Bell pepper - 70 g

Carrots - 30 g

Leek - 30 g

Celery root - 30 g

Salted lard - 80 g

1. Place roots in cold water (if desired, you can even bake them in a dry frying pan or directly on the stove, just not to the point of burning), green stems and prepare vegetable broth.

2. Wash the millet well, changing the water several times, and add to the broth. Let it boil and cook over low heat until the cereal is softened.

3. While the millet is cooking, let's make the soup dressing. Cut the salted lard into small cubes or cubes.

4. We will also cut the vegetables for dressing into small cubes, and the leeks into rings.

5. Fry the lard in a frying pan, preferably with the addition of vegetable oil, gradually add vegetables and a couple of tablespoons of broth, and simmer until soft.

6. Meanwhile, the millet is cooked, remove the roots and stems from the kulesh.

7. Add hot vegetable dressing with lard, bring the kulesh to a boil so that the taste of the dressing blends harmoniously with the soup itself. Let it brew a little and you can serve.

8. When serving on plates, add finely chopped dill, you can add green onions.
