Chinese tomato soup

Let's have a cookout at home and prepare Chinese spicy tomato soup.
It does not require any special spices or products - everything that is most accessible and familiar: tomatoes, eggs, green onions. Soy sauce, fresh ginger and hot red pepper add spiciness and special taste.

Eggs - 2 pcs.
Soy sauce - 4 tbsp.
Fresh large tomatoes - 2 pcs.
Tomatoes canned in their own juice - 6 pcs.
Fresh ginger - 1 tsp.
Hot red pepper - to taste
Salt - to taste
Ground black pepper - to taste
Vegetable oil - 3 tbsp.
Meat broth - 150 ml
Green onions - 4-5 pcs.

1. Take ingredients for making Chinese tomato soup with egg.
2. The soup cooks quickly, so prepare all the ingredients first. Break the eggs into a small bowl and pour in a couple of tablespoons of soy sauce. Whisk the eggs into the sauce.
3. Peel fresh ginger and cut into small strips.
4. Wash fresh tomatoes and cut into small cubes. Remove the skins from the tomatoes in advance by pouring boiling water over them for a few minutes.
5. Pour vegetable oil into a saucepan, heat it and pour in the scrambled eggs with soy sauce.
6. Stir the eggs, fry them for 1-2 minutes until slightly “set”.
7. Place chopped ginger in a saucepan. Cook for another 1-2 minutes.
8. Pour in soy sauce (2 tbsp). Stir.
9. Place chopped fresh tomatoes in a saucepan. Stir. Add red hot pepper. Simmer until the tomatoes release their juice.
10. Remove the skin from canned tomatoes and mash them into a paste with a fork. Pour the tomato puree into the saucepan.
11. Bring the soup to a boil and cook for another 3-4 minutes. If the tomato soup turns out to be very thick, then dilute it with boiled water or meat broth to the desired consistency. Season with salt if necessary and sprinkle with ground black pepper.
12. Cut the green onion feathers lengthwise, then into pieces 4-5 cm long.
13. Pour hot Chinese tomato soup with egg into plates, sprinkle with green onions and serve.
14. Thick, aromatic, with rich tomato and bright ginger flavor, the soup will warm you up during the cold season.
